Powdered sugar makes so many cookies and desserts prettier. If you don't have a dedicated powdered sugar container, then get one! They don't cost much and you'll find yourself dusting everything from fresh strawberries to grapefruit! Powdered sugar on these gluten-free cookies that we call ice cream scoop cookies is the icing on the cake.

Baking Gluten Free

Today baking gluten free is really pretty simple and easy. So many products are available to create gluten free baking products. From pie crusts, cakes, pancakes, and waffles to cookies, breading and more. Baking gluten free is not as much of a chore. And, we have lots of fluten-free flours from which to choose. Now I've used rice flour in these ice cream scoop cookies.

Another thing about theses cookies is that because they're gluten free, it's like 'icing' on the cookies. Yes, it's an added bonus for many of you! There are so many things I enjoy about these ice cream scoop cookies. They're not too sweet. They've got a crunch on the outside. They have the texture of a shortbread cookie. There's a buttery coconuteeee flavor that just makes me want to take one more bite.

Gluten-Free Flours

Gluten-free flours are standard now in even the most remote and smallest grocery stores. According to Healthline, here are your best gluten-free flours:

  • Almond Flour.
  • Buckwheat Flour. [Buckwheat may contain the word "wheat," but it is not a wheat grain and is gluten-free.]
  • Sorghum Flour.
  • Amaranth Flour.
  • Teff Flour.
  • Arrowroot Flour.
  • Brown Rice Flour.
  • Oat Flour.

Rice Flour

Since there are quite a few choices for gluten-free flours, why did I choose rice flour? Very scientific. It was in my refrigerated drawer. Yes, I keep rice flour and other flours refrigerated for freshness. Living in a humid climate during many months of the years, I've learned that all flours can get 'buggy'. And, I hate to have good money invested in rice flour, go bad.

There are other benefits of rice flour. Rice flour can possibly give some beauty benefits like brightening your skin. Supposedly, rice flour can help with acne and pigmentation spots. You'll find that rice flour is a great source of Vitamin B, and this helps in producing new cells.

Yes, I'm putting this in the best cookies recipes that I've ever made. I have to restrain myself because I know these cookies are a treat and not to be eaten like they're slices of cucumbers without calories. While I don't know the count, I'm sure they tip on the 'omg' side! However, in life, exercising most everything in moderation means you don't really have to sacrifice much, right!
