Have I told you how much I love sweets?? Well I came across this recipe over Easter… as seen here in my top five Easter Treats… and I had to make it! It seriously only has 4 ingredients!

Gluten Free Dark Chocolate Almond Joy Cups
Ingredients:
One bag of dark chocolate chips or chunks (9-10 oz)
1/2 Cup coconut (I used sweetened because I was lazy… but you can sweeten it to your liking with agave)
1/4 Cup Coconut Oil to room temperature
Almonds if you want (my husband didn’t want almonds in his…)

Directions:
Fill mini muffin tins with liners… I had no liners so I used tinfoil.

Melt chocolate for 1 minute in microwave then stir, heat again for 30 seconds until melted.



Take a spoonful of chocolate and put in each liner, take a butter knife and spread it gently up the sides.

Put in the fridge until hardened… say 15 minutes. Meanwhile mix the coconut and the oil together in a small bowl.

When hardened take a scoop of coconut mixture and put onto of each cup.

Add almonds if you want….

Sometimes… you feel like a nut… sometimes ya’ don’t!
Cover top with another scoop of melted chocolate….

Refrigerate… for as long as you like (or until hardened).
