First up there is a delicious Glazed Spiced Gammon. Gammon is a popular holiday roast, if not on Christmas day then certainly on either Boxing Day or for New Years. This Gammon is roasted until tender in a vegetable broth, then glazed and roasted again. It is served warm with a creamy mustard sauce. Leftovers make a brilliant Boxing Day lunch served simply with some salad, pickles and rolls.
