Instructions:
In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt
In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix; lumps are okay
Preheat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter
For each butterfly pancake, pour a small amount of batter onto the skillet in the shape of a butterfly's wings
Use a spoon to create the desired shape
Place a few fruit slices on top of each wing to create colorful patterns
Cook until bubbles form on the surface of the pancakes and the edges look set, then flip them carefully with a spatula
Continue to cook until the pancakes are golden brown on both sides
Remove the pancakes from the skillet and let them cool slightly
To assemble, place two pancakes next to each other to form butterfly wings
