Fried Wood Ear Mushroom with Egg 木耳香炒蛋

Wood ear mushroom aka black fungus is basically tasteless but the health benefit of eating is great.  I was told that if you drink this every day that is boiling some wood ear mushroom with water, it is very good for health.  It can cleanse blood, rich is dietary fibre, high in iron, free radical busting vitamin B-2 and many more.
For me, I have never tried drinking as a beverage but I especially love it when it is steam with chicken and ginger but today I want to try a different dish.
A good dish to have on a no meat Friday I must say.
So let's dig into this Fried Wood ear mushroom with egg 木耳香炒蛋.
Fried Wood ear mushroom with egg 木耳香炒蛋
What you need:
wood ear mushroom (black fungus)
Fresh button mushroom
4 Egg, beaten
3 dried chillies, deseed and cut chunk
Oil
2 tbsp soya sauce
½ tsp salt
1 tsp sugar
1 tbsp sesame oil
1½ tbsp of potato starch with 2 tbsp water
300ml water (adjust accordingly)
Method:
Hydrate the wood ear mushroom until it is soft.  Remove the hard part in the center.  Cut into bite size.
Heat 2 tbsp oil and on low heat add in beaten eggs.  Using a chopstick, stir occasionally to break into pieces.  Fry until fragrant and golden.  DO NOT OVERCOOK.  Remove and set aside.
Add in a tsp of oil, add in button mushroom and stir fry until soft and fragrant.
Add in wood ear mushroom.  Stir fry to combine.
Add in dried chilli.
Add in fried egg and stir to combine.
Add in soya sauce.
Add in water, enough to submerge ¾ of the ingredients.
Add in sugar and salt.
Let it simmer for 3 mins.
Add sesame oil.
To thicken, add in potato starch mixture.  Stir to combine.
Serve
