French Onion Black Eyed Peas

Black eyed peas. Oh, boy, there's some history and symbolism behind these healthy little critters! Their claim to fame is usually around New Years. Cooking up a big pot of black eyed peas (and collards), especially if you're Southern, is just what you do on New Years Day. These little beans represent prosperity for the new year.

Typically, I season any kind of bean with some kind of pork. And, for these black eyed peas, I'm using thick cut bacon. But, I'm not stopping at the bacon seasoning. After those beans are about tender and cooked, we are going to throw in a healthy amount of diced pork chops. Yes, just buy boneless pork chops, not super thin, and dice them up. These nuggets of meat add to the tastiness of the black eyed peas soup.

I've decided to give these beans a fancy 'Frenchie' flair. And, once you check out the ingredients, you'll understand what you'll be doing. Yes, this French onion flair sure does take these beans from maybe just plain and lowly to rather prissy and special. And, who doesn't love something green with their beans? Well, by adding fresh spinach, you not only have your greens, but you have a healthier bowl of black eyed peas.

Start you new year off on the right foot. Even though it's probably just a old wives tale about luck and prosperity and black eyed peas, I don't want to chance it. So you can rest assured, a big pot of them will be on my stove come New Years Day! xox ~ally

Ingredients

  • 1 lb. dry black-eyed peas
  • 2 slices thick cut bacon
  • 1 tsp. sea salt
  • 1 package (1.4 oz.) Knorr French Onion Recipe Mix
  • 2 Tbl. Bragg Nutritional Yeast
  • ½ tsp. red chili flakes
  • 2 cups diced pork chop meat, small dice
  • 2 cups fresh spinach, roughly chopped, packed
