We were away during the Christmas period and this will be our last trip for 2014. Time flew by so quickly especially this year, I hope 2014 was a great year for you.
For the last 2 months, we were feasting so much that my weight had ballooned to an unbelievable marker. I am definitely not complaining but will have to be more motivated to exercise next year. In the meantime, let me share with you this wonderful recipe that I tasted during a caroling session. One of the cake that was served during the party was really good. Later we found out that it is flourless! We could detect the nice fragrant of the orange but I never imagine it to be flourless. Though I had eaten some flourless cake before but this one is seriously good. It is light and does not have that heavy flourless cake texture at all.The host's sister in law was really kind to share this, Flourless Orange Cake with me. What you need:280g chopped orange (need to scrubbed and with skin on – discard pips)5 eggs, separated200g castor sugar225g almond meal
1 tsp orange essence (optional)50g faked almondsMelted chocolate for decoratingMethod:
Blend chopped oranges and put the chopped oranges in a small saucepan, add in 1 tbsp water, cover and cook gently for 30 mins or until soft and excess liquid has evaporated. Leave to cool.
Preheat oven to 180°C. Lined a 9” round pan.
Whisk egg whites with ½ of the castor sugar to stiff peak.
Whisk egg yolks and orange essence with the remaining castor sugar until pale and quite thick.
Whisk in the finely chopped oranges.
Fold in the almond meal.
Stir in 1/3 spoonful of the whisked egg white into the batter.
Fold in the remaining egg whites.
Pour into greased pan and level the batter.Sprinkle with flaked almond.
Bake for 50 mins or until cake is golden and cooked.
Leave cake to cool in pan. Remove and drizzle with melted chocolate.
