Feeling French??
It’s no secret, I love to cook. And when it comes to chicken, I’m a sucker. That is why I love this recipe. You can make it ahead and freeze it, and then make the sauce when your ready to cook it. Great meal if your cooking for yourself or planning for a big dinner party. My husband absolutely loves this recipe. It’s like you’re a gourmet chef {when in reality you’re not}.
“Easy Chicken Cordon Bleu”
What you need:
4 Chicken Breasts
4 Slices of Swiss Cheese
4 Slices of Ham
4 T. Flour
1 Cup of Italian Seasoned Bread Crumbs
Salt and Pepper to Taste
2 Eggs Beaten
Toothpicks
For Sauce:
1 T butter
1 T. Flour
1 Cup Milk
1/3 C. Parmesan Cheese
1 t. Garlic Powder
Preheat oven to 375. Coat a casserole dish with cooking spray.
Lay each breast in between two sheets of parchment paper, pound with a mallet, until thin enough to roll {about 1/2 in.}.
Lay the flour and bread crumbs on separate plates for assembly.
Season each breast with salt and pepper, and then lay a slice of swiss cheese and ham on top.
Tuck both ends in and then roll the chicken around the cheese and ham, toothpick where necessary. Dip in Flour. Then dip in egg. Then roll chicken in breadcrumbs. Place each one into coated casserole dish. Bake about 40 minutes until browned and juices run clear. While baking prepare sauce. In a small saucepan melt butter, with a whisk beat in flour, when mixture bubbles whisk in milk stirring to avoid lumps, Stir in remaining ingredients, let simmer until thickened. Let chicken rest for 5 minutes after you take it out of the oven. Drizzle sauce on each breast. Then for presentation purposes…. {i.e.. to look pretty…} slice! Yum. Easy Peazy.
