Eggo Granola Apple Frittata

This recipe is perfect for weekend morning treat! It’s easy, quick and boholicious. Since Eggo is running their annual contest, I thought I’d throw my eggo into the ring and see what happens~~last year I submitted, I think three or four recipes and none caught the eyes of the judges, but, hey, that’s how the ol’ Eggo crumbles~~you win some and you lose some, but one thing’s for sure, you don’t wanna mess with my Eggo fritatta!

eggo granola apple frittata

Make: One 7” skillet
Preheat Oven to 350

What you need:
4 Eggo waffles (torn into pieces)
2 cups granola (your favorite from the store)
2 eggs, beaten
½ cup cream
3 Tbl. butter, melted (divided)
1 apple, small cut into thin slices round-wise
1 tsp. cinnamon
4 tsp. sugar

What you do:
In a mixing bowl, combine the Eggo waffle pieces, granola, eggs and cream and work together with your fingers making a thick mixture.

Drizzle one tablespoon of butter into the heavy skillet and swirl around coating the sides. Put the Eggo batter in and pat gently.

Top with the thin sliced apples. Drizzle with the remaining butter. Combine the cinnamon and sugar and sprinkle half on top the mixture. Bake in a preheated 350 oven about 18-20 minutes.

Remove from oven. Let cool about 10 minutes. Slice and sprinkle each serving with the remaining cinnamon sugar.
