Éclair Week at Fauchon

FAUCHON ECLAIR-1

Did you know it was Éclair Week at Fauchon?
I didn’t know till last Saturday when I was giving a Chocolate and Pastry Tour. I suffered through almost 90 minutes of my tour clients tasting chocolates, caramels, and macarons from the top pastry and chocolate shops, happy and smiling on the outside, while miserable on the inside because I couldn’t taste a morsel because of my recent high sugar count.
Once I stepped into Fauchon, the situation was exacerbated, as I practically drooled over the endless rows of glistening éclairs with their almost cartoon like colored veneered tops. As my tour clients were pondering what flavor they were going to sample, I noticed the other side of the counter had a section of savory éclairs with flavors such as foie gras and strawberry, Chevre, fig, and nut, and salmon tartare with Yuzu cream. The dream of indulging in one of these beautiful babies was now becoming a reality. I couldn’t get one till I finished my tour, but the split second I said goodbye to my clients, I dashed back to Fauchon. I chose the hot pink colored salmon, mango, and grapefruit éclair and it tasted better than it looked, which was almost impossible. The smooth salmon and the sweet bits of mango and tart bits of grapefruit wrapped in the crisp perfect choux was heaven on earth/out of this world. Best of all I didn’t feel any guilt, as it was sugar free and just as yummy and satisfying as the sweet éclairs.
This is the seventh year of Éclair Week and there are 36 flavors including wild strawberries with lime, Paris Brest, strawberry and pepper, coffee and cardamom, coconut and lemongrass, and the Mona Lisa (stuffed with chocolate almond cream, which I wrote about a few years ago. Click here to read).
