Easy Weeknight Dinner…. Yummy Potato Tacos

I don’t know about you, but I could have “Taco Night” every night in my house. Tacos are fast, easy, and can be made a million different ways, ranging from super fatty, to amazingly good for you, and surprisingly they all taste soooo good! In San Diego Taco Tuesday is a popular trend. On Tuesdays Mexican restaurants have killer specials on Tacos and drinks…. awwww…. Tuesdays in San Diego, oh how I miss thee.

Anyways.

Back to reality. One of my favorite ways to prepare tacos is with potato filling. I cook corn tortillas in Coconut Oil {gives them a nice sweet buttery flavor} and use mashed potatoes as the filling and then top with anything I have on hand.

Easy Potato Taco recipe

What you Need:

4 Large Potatoes steamed and then mashed

1/4 C. Non-Dairy Milk {or cows milk if you like that

Nutritional yeast to taste {adds a nice cheesy flavor} if you are not vegan add a 1/4 C cheese to the potatoes after they are cooked

2 T. Chili Powder

1 T. Garlic Powder

Salt and Pepper to taste

Corn Tortillas

3 T. Coconut Oil to cook the tortillas in

Toppings: Tomatoes, Onions, Salsa, Cilantro, Kale, Greens….. whatever your little heart desires.

Cook Potatoes until fork inserts easily. While potatoes are cooking, put one Tablespoon of coconut oil into hot pan and brown each corn tortilla until crispy, place in 200 degree oven to keep warm. When potatoes are done, mash well. Add remaining ingredients to potatoes, stir until well combined.

Take tortillas out of oven when potatoes are done, spread a layer of potato onto each tortilla, top with tomatoes, etc.

CHOW DOWN. YUM.

Happy Taco Thursday….. because every day is Taco day in my house.
