Easy Vegan Fudge Brownies {Dairy, Gluten, Soy, & Egg Free}

{Page down for the ooooey gooey brownie recipe, and they DO NOT contain black beans, thank goodness!}

Over the past five years I have had many health issues, most of which were undiagnosed because of improper testing. Since moving to Kauai, I have been blessed with many people in the health industry trying to cure my bodily pain and intestinal issues. I was extremely lucky to be introduced to Entero Lab out of Dallas, Texas. My doctor recommended food allergy testing done through this lab. I had previously done allergy testing with bloodwork, but I guess it isn't completely accurate.

The day I was released from the hospital from my second shoulder surgery, I received my test results from Entero Lab. I hesitated opening the results, I just had a bad feeling. Well, I am now allergic to Gluten, Soy, Dairy, and Eggs. These four allergies are the only ones I was tested for. Once I get a handle on these four, I will get other foods tested as well.

Although it is a bit overwhelming to find out I have so many food allergies, I am happy to know the primary reason I have felt ill for so long. I stopped eating the allergens almost a month ago and I can already see and feel positive changes to my body. I don't normally get into personal health issues, but I figured I should explain, since there will be a huge shift in the ingredients used with recipes I post from here on out. I hope the new "Allergy Friendly" Recipes will benefit some of you out there!

I think the hardest part for me will be going to restaurants and being afraid of being "that annoying person" who can't eat anything on the menu and has to have the chef prepare something special. It's also very inconvenient to not be able to buy most prepackaged foods, since almost all of them contain wheat, milk, eggs, or soy.

I am so excited to share the recipe below.

One of the saddest part of all of these food allergies, was the:

"OH MY GOODNESS, WHAT ABOUT GOOOOEY BROWNIES???!!" moment. Well I had multiple of these moments..... I adapted this recipe from my Vegan Chocolate Chip Cookie Recipe and it worked on the first try! Let me know what you think!

Easy Vegan Fudge Brownies {Dairy, Gluten, Soy, & Egg Free} Ingredients:

1/2 C. Coconut Oil room temperature

2 Large Flax Eggs {2 Tablespoons of Ground Flax Combined with 4 Tablespoons water}

1 C. Raw Sugar

1 T. Vanilla

1 t. Sea Salt

1 t. Baking Powder {make sure its Vegan}

1 C. Gluten Free Flour Mix {I have been using Pamela's Artisan Flour Blend You have to make sure it isn't the Baking Version... that one has dairy}

1/3 C. Cocoa Powder {Double Check ingredients to make sure it's 100% Cocoa}

1/2 C. Almond or Coconut Milk

2/3 C. Enjoy Life Vegan Chocolate Chips

1/3 C. Pecans or Walnuts { optional}

Directions:

Preheat oven to 350. Grease {I use Coconut Oil} 8×8 glass dish. Set aside.

Place all ingredients except for chocolate chips into large bowl. Stir until well combined. Gently mix in chocolate chips and nuts if using. Spread into greased baking dish. Bake at 350 for 15-18 minutes. DO NOT OVERCOOK. They will become crumbly and extremely dry. They will not look or feel like traditional brownies while baking. When the brownies are done, the edges with be matte looking and the center will still look glossy. Remove from oven and let cool completely before serving. Enjoy!
