Easy PB&J Oatmeal

This Easy PB&J Oatmeal is ready in less than 10 minutes and makes a fantastic easy vegan breakfast! We cook the berries with the oats to get a beautiful purple oatmeal that tastes as delicious as it looks. You can also make it as overnight oats or in the microwave.

I've been back on an oatmeal kick lately! I started making these blueberry muffin oats and this chocolate peanut butter oatmeal again recently and it reminded me of how much I love a bowl of warm, comforting oatmeal in the morning. I love all my other breakfast foods (hello avocado toast, fluffy pancakes, and crispy waffles) but oatmeal always has a very special place in my heart. This PB&J oatmeal is certainly going to be on rotation now that berries are back in season - though these could easily be made in the dead of winter with frozen berries.

This peanut butter and jelly oatmeal is:

Easy PB&J Oatmeal

These purple oats are made by cooking the berries with the oatmeal, so the berries break down into jammy goodness that flavors the oats so delicious. Then, we top the oatmeal with a spoonful of peanut butter, more berries, and a little cinnamon if you want. Simple, filled with fiber, and so delicious.

You'll be jumping out of bed for this healthy plant-based breakfast! Let's get into how to make this peanut butter & jelly oatmeal.

Ingredients & substitutions

  • Banana: the banana is used for sweetness here, half of one does the job. You can replace this with 1 tablespoon of maple syrup or honey if you don't have a banana or prefer not to use one, or just skip it if you prefer a less-sweet oatmeal.
  • Oatmeal: make sure to use gluten-free rolled oats if you have a gluten sensitivity. Skip the quick oats - we want the thicker texture of the rolled oats.
  • Berries: use any berries you like and have on hand. I did blueberries and raspberries. You can use frozen berries here - no need to thaw!
  • Milk or Water: you can use either, I did a combination of half water and half oat milk.

Oatmeal toppings

  • Peanut Butter: I love crunchy peanut butter here for extra texture, but don't skip the nut butter - otherwise they're just berry oats! You can use another nut or seed butter here if you prefer.
  • Berries: extra berries for texture and flavor. Use your favorites :)
  • Cinnamon: I love sprinkling a little cinnamon on top - I used a cinnamon seed seasoning blend.

You can also opt to add a swirl of berry chia jam or some chopped peanuts!

How to prepare as overnight oats

To make this peanut butter & jelly oatmeal as overnight oats, you'll simply want to combine all of the ingredients cold and place in a jar. Refrigerate overnight.

In the morning when you're ready to serve, stir and add any extra liquid as desired to get to the oatmeal consistency that you prefer. You can heat briefly in the microwave or over the stove if you want warm oats.

How to make PB&J Oatmeal in the microwave

To make these peanut butter & jelly oats in the microwave, combine everything in a microwave-safe bowl and microwave on high for one minute. Stir, and microwave for another 30 seconds if the liquid isn't absorbed yet.

Let stand for a few minutes to finish absorbing and cool slightly before adding your toppings and digging in.
