Easy Paleo Breakfast Recipe:
Avocado Egg Boats
Simple. Succint. Virtually carb free. 100% Paleo
This avocado boat fits every menu and can be served at any time. It doesn’t even need the formality of a meal: You can eat this gorgeous dish as a easy paleo breakfast idea or paleo approved snack and not ruin your calorie, fat, carb, sodium or protein budget.
Three ingredients
1 avocado
1 egg
Sea salt and pepper to taste
Method
- Slice the avocado, with the skin on, in half.
- Use a scoop to choose the size of the hole where you will place he egg.
- Place the avocado, skin side, on a heated skillet, already sprayed with olive oil.
- Crack the egg right on the whole. It will cook on low heat,convection style, once you cover the skillet with a lid. Keep looking at the egg and decide when you want to take it out.
- Sprinkle with spices as it cooks. Then carefully remove and eat using the avocado as a bowl. It normally takes about 2 minutes for the egg to fully cook.

Pairings:
Steak is the best pairing for the avocado boat. You get the carb free trifecta with three Paleo staples that are always on your side.
Chicken wings and ribs are also great options. It is just like being served a “baked potato” as a side dish, only this version of the carb-loaded side dish actually adds nutrients, protein, and sustainable energy to your body.
Gammon is another fantastic option, so long as it is found purchased as naturally as possible, or you can just take care of seasoning it yourself using sea salt. This is the British equivalent of the “country ham” that tastes saltier than regular and is sliced thick like a steak.
Toppings & Alternatives:
Top with salsa
Top with bacon…of course
Top with seasoned slivered almonds for extra crunch
Dunk celery sticks or carrots in the egg
Pour mega hot sauce on it- Habanero is the best
Sprinkle curry powder or powdered chives for an extra kick

Remember that Paleo bread is available in multiple stores that carry products for practitioners of all diets. If you must have your toast with eggs, you can! Paleo bread is wonderful, and made with coconut flour,
I personally do not like my avocado to be warm. I actually poach the egg separately and then put it on top. I also scoop out the avocado and leave it in bowl form.
Why? Because if you are like me, and eat like a caveperson in matters of manners as much as diet, chances are you will end up ingesting the skin. It has happened before, and it does not only taste awful, but you can choke. Be careful.
