Paleo breakfast can be simple and easy. Making these bacon & egg muffins is a tried and true path to efficient cooking. I love to make these, as they allow me and my family to continue our morning routine as they cook and have a delicious and filling pale breakfast, as we leave home and face our day.

Let’s face it, bacon and eggs make a great breakfast. There are various ways of preparing this tasty meal, the most common being to fry the bacon and eggs in a skillet or you can also whip up an egg frittata. This recipe is slightly different though because we are wrapping the eggs in bacon and baking these little treats in the oven. Choose sugar-free, nitrate-free bacon from humanely raised pork, and organic, free-range eggs if possible.

To save time in the morning, you might want to fry the bacon the night before, then drain it and keep it in the refrigerator until morning. Honestly, if I’m tight on time or I’m not able to pre-cook the bacon, I often skip this step. Since you are going to bake the bacon-wrapped eggs, you can pop them in the oven then use the time to get ready for your day. Serve these hot, perhaps with cherry tomatoes, fresh fruit or even asparagus spears.

If you want to add extra ingredients to the bacon cups, when adding the eggs, consider green onions, mushroom slices, baby spinach leaves, or even some dried mixed herbs. This recipe serves 6 people so you can halve it if you want. Perhaps you are looking for something unusual to make but not too time-consuming, in which case this will make an excellent (or egg-cellent) start to your day!

Easy Paleo Breakfast Ideas: Bacon & Egg Muffins from Gray

What You Need:

12 slices of bacon

12 eggs

1/2 teaspoon salt

1/2 teaspoon black pepper

How to Make It:

Preheat the oven to 375 degrees F. Fry the bacon in a skillet until transparent and soft, then drain it on paper towels. Line each piece around a muffin cup. It’s fine if the bacon overlaps.

Now break an egg into each one, so you have 12 muffin cups lined with bacon and filled with an egg. Grind over some salt and black pepper, then cook for 15 to 20 minutes in the oven or until the whites and yolks have set. Serve immediately.
