Easy Paleo Breakfast Biscuits

There is no rolling necessary with this paleo breakfast biscuit recipe. Simply combine the dry ingredients, add in the wet ones, and mix to get a stiff dough. You can them shape 8 biscuits and bake them until they are done. If you are quick, you can have them made and in the oven in about 5 minutes! Let them bake while you shower and dress, then enjoy your delicious homemade biscuits.

The hot biscuits are nice split and served with honey or maple syrup, or you might choose some butter and fresh berries as your topping. What about a homemade sausage gravy to go on top? However you choose to enjoy these biscuits, you are sure to love the crumbly texture and well-balanced flavor.

We are using almond flour as the main ingredient, then adding eggs and baking soda to get the correct texture. Honey and lemon juice add flavor accents to these biscuits, as does a little sea salt. Why not double the recipe if you are feeding a hungry family? Anything not eaten immediately will keep for a couple of days in an airtight container at room temperature and you can either enjoy the biscuits cold or warm them back up briefly in a warm oven.

What You Need:

3 cups almond flour
¼ teaspoon sea salt
1 teaspoon baking soda
2 eggs
1 tablespoon lemon juice
2 tablespoons honey

How to Make Them:

Preheat the oven to 325 degrees F. Combine the almond flour, salt and baking soda in a bowl. Make a well in the middle and add the eggs, lemon juice and honey. Stir the mixture until you get a stiff dough.

Next, divide the dough into 8 equal-sized pieces and flatten each one to 1 1/2 inches wide using a piece of parchment paper to press down (so it doesn’t stick). Arrange the biscuits on a parchment paper-lined cookie sheet and bake for 20 minutes or until cooked through and lightly browned.
