Getting kids to eat vegetables is a challenge in pretty much every part of the world. We know it’s essential because of all the nutrients and fiber, but our kids happen to disagree! So the only way out is sneaking vegetables into delicious dishes so that they forget that they’re actually eating veggies! Today’s Okra Rice recipe is one such recipe, that’ll have them asking for more!
Easy Okra Rice Recipe
Ingredients:
- 2 cups cooked rice
- 1 cup chopped okra
- 1 onion sliced
- 1 small tomato finely chopped
- 2-3 cloves of garlic
- 1 sprig curry leaves
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon raw mango powder
- 1/2 teaspoon garam masala
- 1 teaspoon red chili powder (adjust the quantity as per taste)
- 2 tablespoons oil
- Salt to taste
Method:
1. In a wok, heat oil. Add cumin seeds to it. Once the seeds crackle, add curry leaves and minced garlic. Stir fry for few seconds.
2. Add sliced onions and saute for a minute. next add the chopped tomato and stir fry until they turn mushy.
3. Now tip in the spice powders, salt and mix well.
4. To this add the chopped okra and stir fry for a minute or two. Cover cook until the okra is soft.
5. Now add the cooked rice and mix well with the okra masala. Take care not to break the rice while doing so.
6. Cover and cook for another 2-3 minutes on low flame. Put off the flame.
7. Open the lid and fluff up the rice with a fork. Serve hot with curd or raitha and papad.
Okra is good to relieve constipation in toddlers, as it supplies the essential dietary fiber that enables smooth bowel movements. This one pot meal is low in calories and is a good choice for lactose intolerant people to get their daily dose of calcium.
