
Cake has been a highlight of the numerous lockdowns we have found ourselves in. Whilst we have mainly used cake mixes which are quick and easy to make, Liv made a cake from scratch today! Her Food Tech live lesson was to follow an easy Lemon Drizzle Cake recipe with her teacher during a live demonstration and hopefully she would be left with a yummy cake.
With so few ingredients needed, making it quick to make, this Lemon cake recipe is perfect if you are looking for an easy cake recipe for baking at home with kids during lockdown!

Easy Lemon Drizzle Cake Recipe
Ingredients
Cake125 grams Self - raising flour
125 grams Butter/ Soft Margarine
125 grams Caster sugar
2 Eggs
Grated zest of 1 lemon
Drizzle50 grams Caster sugar
1 tablespoon lemon juice/ juice from the grated lemon

Lemon Drizzle Cake Method
- Preheat oven 180°C/160°C Fan/Gas 4.
- Grease a 7-inch cake tin and line with baking parchment.
- Place flour, sugar, margarine, lemon zest and eggs in a mixing bowl.
- Beat together with a wooden spoon until the mixture is a smooth, dropping consistency.
- Spread mixture evenly in the prepared cake tin.
- Place in oven and bake for around 20/30 minutes, until golden brown and cake feels "springy" when tapped with fingertips.
- Whilst cake is baking, mix the caster sugar and lemon juice for the drizzle.
- Pour drizzle over hot cake and leave to cool in the tin.

Recipe notes
Actually, Liv did a really good job and the cake was lovely with a good brew! Liv's cake was baked in a loaf tin, though you could use a normal round or square cake tin. Make sure you do not pour all the lemon drizzle in one spot as the cake will sink! Pouring on the lemon drizzle as soon as the cake is out of the oven will allow it to seep through the cake and give it a lovely lemon taste.
The cake was kept in the oven for 23 minutes, but next time if baked in the same tin, we would keep it in for 30 minutues.
