This is precisely why I keep lots of it in my pantry. It's there when I need it just for things like this!

A lot of my cooking if spontaneous. And, that means I keep staples in my pantry that enrich the nutrition. Bone broth does that!

Asian Noodle Bowl

Put your own Asian twist on the noodle bowl. Top with a soft boiled egg, oh, this gives a luscious rich flavor.

Soup Noodle Bowl

The thing that I love about a soup noodle bowl is that you can build the vegetable content as you like it.

I happened to have some baby cauliflower, broccoli and zucchini from Trader Joes. It was perfect for a rough chop and using.

Adding other colorful veggies, carrots, onions, celery, spinach, chard, whatever your heart desires makes this bowl of healthy unmistakably delicious!

Veggie Noodle Bowl

While I threw in some chopped previously grilled chicken breast meat, you can leave totally veggie. Seafood is another option. Maybe some shrimp? Or if you have some leftover over steak, wow, now throw that in, too.

Pop and I spent a month in China. We learned a LOT about how they eat. How they approach food. And, their idea of tasty. There is about zero waste. All things including bones and skin of fish, meat, etc. are used for something. Many of these things, like skin and bones, are dried. They impart a huge amount of flavor and nutrition.

Broth Bowl Recipe

While I used chicken bone broth, this recipe could also be done with beef bone broth. I didn't want mine super brothy, so I used a 16 ounce box plus about one-fourth cup of water to rinse out the box. That's it for the liquid.

I did load up on the vegetables. And, as you might know, the veggies do have water content in them.

Now, I don't like to cook my veggies to death! For us, we want them to be tender, al dente, retain their vibrant hues and even have a tad bit of crunch to them.

On the positive side of this less cooking approach is the fact that they retain more of the nutrient value too!

Chicken Ramen

Let's talk noodles.

You want something healthy and not overloaded with 'stuff' to make them tasty. You don't need tasty when you have the Clean Monday Meals seasoning, the fresh veggies and the bone broth.

And, I must say that we had some leftover and after two days in the refrigerator, Pop devoured and thought it was even better.
