It's so easy to make a blueberry pie when you use puff pastry!

Here's one brand of gluten free puff pastry. Yes, there are several boxes, but if you want to make more of my recipes using puff pastry, then it's wise to have it in your pantry!

And, with the flour required for this recipe, well, you could add some else to thicken, like cornstarch. I'm using flour because for my family, we don't need to do gluten free. Everyone's different!

For me, open faced pies are really fun and easy to make. You just can't 'mess up' on them. Like a galette or a flab pie, they feature the fruit you're using.

And, my thinking is why not showcase the fruit by being able to see it.

Yes, you're going to cut like into pieces. But, when you remove it from the pan, well, have a nice flexible spatula or big scoop spoon.

It's one of those 'pies' that just ooozes with juices and berries.

For me, not much, but for the highly trained patisserie chef, a lot.

According to Discover South Carolina:

The biggest difference is that a cobbler is so easy to make (easier than pie!). While a pie is made with a bottom crust and often a top crust, the dough and the fruit filling cook together in a cobbler.

There's basically not much to this blueberry filling.

It's all blueberries. And, since they're full of liquid, we'll need to add a thickening agent. Common thickeners for pie fillings are flour, cornstarch and tapioca. Just remember that all thickeners have pros and cons. The big trick is to use the right amount to get your desired thickness. For me, I don't want an overly 'thick' filling.

As you see from my pictures, I'm garnishing the blueberry pie slice with unsweetened coconut shavings and fresh mint.

You can add what makes you happy. Whipped cream! Vanilla Ice Cream. Gelato! Remember, it's your masterpiece, so design it to represent you!
