Dirty Snowballs Aka Lamingtons

While making these lovely treats I was ranting away a storm ( I over talk about nonsense) about the name of these little things.  It sounds to much like lame – ingtons and they certainly are not lame, they should be called something cool like hedgehogs, pin cushions or dirty snowballs.  So that is how the renaming of lamingtons went down.

With Christmas just around the corner this pretty and easy cake Should be made.  What are dirty snowballs? Its a dessert from Australia made of sponge cake, chocolate sauce and coconut.  So its the triple threat of the cake world.

DIRTY SNOWBALLS ( lamingtons) – 16 snowballs

Cake

Ingredients

  • 1 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 1 tbsp cornflour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp white vinegar
  • 1 tbsp vanilla extract
  • 1/4 cup sunflower oil
  • 1/4 tsp salt
  • 1 cup water
  • 2 cups coconut flakes

Chocolate sauce

  • 3 1/2 cup powdered sugar
  • 1/4 cocoa powder
  • 1 tbsp margarine
  • 1/2 cup boiling water

Directions

Preheat the oven to 180 degrees C / 357 F

In a large bowl mix the flour, sugar, cornflour, salt, baking powder and baking soda  Pour in the vinegar, vanilla, oil and water.  Mix until well combined.  Grease a rectangular baking pan and pour the batter in.

Bake for 30 minutes or until a toothpick inserted comes out clean.  Leave to completely cool.

In a large bowl combine the powdered sugar, cocoa powder, margarine and boiling water.  Whisk until lump free.

Cut the cake into squares.

Dip into the chocolate sauce, making sure its completely covered all around.

Toss into the coconut and cover completely.  Repeat.
