Did My Steak Just Bray at Me?

It was just discovered and revealed that 12 tons of meat was smuggled into Israel through the Palestinian territories and put into the Israeli food system as supposedly kosher meat. The meat, however, was a mix of camel and donkey meat rather than regular beef or lamb.

The announcement included the fact that a lot of this meat that got through until now has made its way to expensive restaurants, and the most recent batch of meat that was caught was designated for that as well.
No restaurants were named.
I understand why, I think. Besides for perhaps legal issues, it probably is not the fault of the restaurants. They buy their meat through their distributors. I doubt they were asking for donkey meat. It was probably the distributors scamming them, or maybe even the fault is above the distributors and only with the smugglers. So why name the restaurants when they weren't at fault?
But wouldn't you like to know which restaurants were using donkey meat? I know I would like to know!
I would think that high end restaurants have more experienced chefs that could tell the difference between different types of meat. I wonder if people who claim to be experts on meat quality are just full of hot air like most people who consider themselves connoisseurs of fine whiskys...
A common joke when eating steak with someone who likes his very rare is that it is so red I just heard your steak moo.. that should be changed to hearing your steak bray
