There’s a saying you learn in childhood.
It appears around the end of dinner time, and rings true to most weeknights (especially when there a baked goods and ice-cream lying around).
Can you guess? (well I guess I really haven’t given enough clues have I…)
Well, anyway, I’m just gonna say it and put it right out there.
I know i’m not alone on this cause… allow my lay it out using my 6 year old dialogue;
“I’m full mum…”
“Eat the rest of your dinner, or else you won’t get dessert”
“No, my dinner tummy is full, but my dessert stomach is empty” (man if only we had a dessert stomach, life would peak)
^^^ it’s almost a universal play by all kids… although the biological validity really rules out this plea for dessert, I still reckon it’s a pretty plausible call.
Kids of the world, I hear ya.
Even though I clear my dinners these days with the absolute ease of a champion, my dessert stomach is totally empty, and within minutes it is calling the sugar gods. Not until my sweet tooth has been satisfied can I really sit easy… I’m almost stuck in an awkward in-between, ill-equipped to continue with my nightly routines, yet not yet finished with my nightly intake… it’s weird. i’m weird.
Well, lucky for me (and now you!) there is an answer to all your dessert problems.
Allow me to introduce the 5 minute brownie in a mug.
Yep, you read it right, a dessert within 5 mins, no pre-baking required.

Let me lay it out….
Think; molten brownie goodness, raspberries to counteract the richness, hazelnuts for crunch (plus, their like chocolates best friend), and of course ice-cream (no questions there).

In the 5 minutes of making this brownie deliciousness in the add breaks of master chef, it took no time at all for me to realize that this is;
a) to good to keep to myself and the microwave
and b) would be a fun to film and put the recipe in video form!
(Yep, in the video it’s fast forwarded, so naturally, i’m whisking like a ninja.)
Hazelnut & Raspberry 5 Minute Mug Brownies
Ingredients:
2 tablespoons butter, melted
2 tablespoons water
1/4 teaspoon vanilla essence
pinch of salt
2 tablespoons cocoa powder
3 tablespoons sugar
4 tablespoons plain flour
handful frozen raspberries,
2 tablespoons hazelnuts, roughly chopped
scope of ice-cream to serve
Method:
In a mug combine butter, water, vanilla essence and salt. Whisk well to combine
Beating well after each addition, add cocoa powder, sugar, flour.
Gently stir through the raspberries then hazelnuts.
Cook on high in the microwave for around 90 seconds or until slightly molten.
Top with ice-cream and some raspberries and enjoy!
