Dessert pizza....two favorite things in one. What I love most about this recipe is that you can make it absolutely anything you want. The pizza I made below was created simply because those were the ingredients I had in the kitchen. So as always, feel free to switch things up to what you'd like most! Another bonus- this is a fast dessert! Yes, I cut corners by using store-bought pizza dough...hey, who wants to whip up their own dough in the middle of the week?? By all means make your own, but that's something I'll save for the weekend!
What You'll Need:
- 1 can of pizza dough (I used Pillsbury classic crust)
- 1 oz container of mascarpone cheese (mascarpone is basically an Italian cream cheese. If you can't find it, you can use regular cream cheese here...I prefer the mascarpone, because in my opinion it's less sweet than cream cheese- and since you're putting other sweet things on top, I think it's overkill unless you use the less-sweet mascarpone)
- 1 tbsp melted butter
- 2 tsp sugar
- 1/4 cup cherry preserves
- 1/4 cup melted dark chocolate chips
- shredded coconut & chopped macadamia nuts, for garnishing
What to Do:
- Spray a cookie sheet with non-stick cooking spray, and roll the dough out onto the sheet, careful not to make any holes in the dough. Brush the dough with the melted butter using a pastry brush, and then sprinkle with the sugar. Bake the dough in the oven according to package directions.
- Let the dough cool completely!! This is probably the most important part; I'm not the most patient person in the world, especially when I'm waiting on food, but this step is a must. If the crust is remotely warm, it's going to melt everything you're about to do next!
- Once the dough is cooled completely, spread the mascarpone cheese all over with a rubber spatula, leaving a 1 inch border on the edges.
- Next, spread the preserves on top of the cheese- it's going to get a little messy, and the cheese and preserves are going to mix in together a bit. Don't worry if it doesn't look super clean, it's dessert, it's supposed to be fun!
- Sprinkle the pizza with the coconut and macadamia nuts, and then lastly, dip a fork into the melted (and cooled!) chocolate, and drizzle the chocolate on top.
- Cut into squares with a pizza cutter or sharp knife; if you have any leftovers store them covered in the refrigerator
