Unsurprisingly, I don’t make dessert recipes from other bakers or bloggers too often, since I’m normally SWIMMING in baked goods of my own over here. But…that certainly doesn’t mean I’m not constantly drooling over all the other blogger’s amazing treats on Instagram.

Liiiike all of the treats that my friend Rachel, who runs the Instagram account RachLMansfield makes – she’s seriously my dessert soul sister. Both named Rachel ✔️ both obsessed with making & eating desserts ✔️ especially with ALL the chocolate and peanut butter ✔️!! She’s also the sweetest, and so full of positivity and self-love on her page and her Stories.

She’s only been blogging for a couple years but I’ve watched her account explode with growth – she seriously crushes it. I’m always drooling over the treats that she’s making and the incredible dessert stacks that she makes herself for snacks and dessert. Holy cow you guys, no one knows how to do toppings like her.

For instance…she made one of my recipes too – my Ultimate Gluten-Free Fudge Brownies, and just LOOK how she topped one of the ones she had leftover. Drool-worthy, right?

Soooo, today I had to share a recipe I’ve been majorly swooning over of hers – Dark Chocolate Peanut Butter Truffle BARS! I love that she made these into bars, but you could totally do truffles too. I just LOVE the cute little candy bar shapes 🤗

I followed her recipe for the most part – the only changes I made were to use maple syrup instead of honey, and add some chopped peanuts to the top of some (for crunch) and flaky sea salt to the top of all of them, because you guys KNOW I can’t live without some flaky sea salt action. You guys MUST try these!

RECIPE NOTE: to keep these vegan, I used maple syrup instead of the Manuka honey that Rachel used.
