This sandwich recipe is made with Cuban bread, hummus and harissa that I made for the mega marathon. I also had some cucumber and tomatoes from my garden and I added them on top for a colorful sandwich. Serve with a soup and you have yourself a filling meal.
Ingredients: Makes 2 sandwichesCuban bread - 1 small loaf (homemade or store bought) Hummus - 2~3tbsp Harissa - 2~3tsp Cucumber - 1 medium, thinly sliced Tomatoes - 2 medium, thinly sliced Baby Spinach - 1cup
Method:
- Slit the bread in half.
- Spread hummus on one side of the bread and drizzle some harissa on it. Top it with baby spinach, cucumber and tomatoes. Top it with the other half of the bread and press lightly. Cut in the middle diagonally. Serve immediately and Enjoy!!
