Come taste some of my rich delicious legacy. Croatian Style Potato Soup. Mom would make during the Fall and Winter months, and we kids loved it!

Easy Potato Soup

Croatian potato soup is often served as a starter or a light meal, accompanied by crusty bread.

It's a comforting and nourishing dish that's perfect for warming up on a chilly day. Feel free to customize it by adding other vegetables or herbs to suit your taste.

This recipe is very similar to the way I'd watch Mom fix it at home in those Appalachian Mountains. A big pot of this hearty potato soup would feed us kids for several days, and our bellies would be full.

Of course, Mom kept potatoes and onions in the dark basement, along with the coal that gave the heat in the house. Yes, we would shovel coal into the hot fire furnace that was self-fed and fueled by coal. Our hot water radiators would bubble with hot water and warm the house.

Veggie Potato Soup

The wonderful thing about this recipe is that you can add other vegetables if you like. Sometimes I'll put in celery and lots of green vibrant celery leaves.

Other times, I might toss in small diced eggplant or even mushrooms.

This hearty Croatian Potato Soup is really a meal. With a bowl of coleslaw or a salad and lots of bread, you're guaranteed to be happy and full.

Easy Creamy Potato Soup

Creamy is one way to describe this soup, but another way is velvety.

Dicing the potatoes very small makes it almost like a creamed soup. And, I don't peel my potatoes because the small dice obscures any hint of a potato peel. Plus, for me, the only potato to use is the Yukon potato.

Easy Potato Soup Vegetarian

Now if you want to make this soup vegetarian then, make a couple of simple substitutions. Use an avocado or olive oil and use vegetable broth instead of bone broth.

So many possibilities and options. It can be a starter to a five-course meal or it can be the big daddy meal!
