Ingredients:
4 large eggs
2 tbsp butter
1 tbsp flour
1 cup (240ml) milk
½ cup (120ml) vegetable or chicken broth
1 ½ tbsp Dijon mustard (adjust to taste)
1 tsp whole-grain mustard (optional, for texture)
1 tsp white wine vinegar or lemon juice (for a slight tang)
Salt & black pepper, to taste
½ tsp sugar (optional, balances the acidity)
Fresh parsley, chopped (for garnish)
