Cream of Broccoli Soup with Fresh Croutons

O how I love broccoli these tiny trees just make a happy lady out of me, but its not just all about me broccoli is a powerhouse full of nutrients.    If you don’t believe me I will give you a couple of health benefits.

BROCCOLI HEALTH BENEFITS

  • Bone Health – Broccoli contains high levels of vitamin C and K , both great helpers for osteoporosis.
  • Cancer Prevention – Broccoli contains  glucoraphanin, which the body processes into the anti-cancer compound sulforaphane.
  • Reduces Cholesterol – Its packed with fiber that draws cholesterol out.

and those are just the tip of the broccoli tree.  Now on to this deliciously creamy soup.

This soup is rich, easy and creamy, with less of the fat.  Well adding the croutons does take away from it being healthy, but its really worth it.

CREAM OF BROCCOLI SOUP WITH FRESH CROUTONS

ingredients

  • 2 bunches broccoli, chopped up
  • 1 tbsp olive oil
  • 1 brown onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cauliflower
  • 4 cups vegetable stock
  • 1 tbsp coconut cream
  • salt and pepper to taste

Croutons

  • 1 slice brown bread, cubed
  • olive oil
  • salt and pepper
  • 1/2 tsp garlic powder

Directions

Heat oil in a medium pot over medium heat.   Add the onions and garlic and let sweat until soft and translucent, about 10 minutes.  Add the stock, cauliflower and broccoli and bring to boil.  Lower heat to a simmer and cook for 10 minutes.  Remove the soup from heat and puree until creamy, add in the cream and season with salt and pepper.

Croutons

Preheat oven to 200c/ 400f

In a small bowl place in the cubed bread drizzle with olive oil and toss until well coated.  Sprinkle with salt, pepper and garlic powder.  Toss.   Spread croutons on a baking sheet and bake for 10 minutes until lightly browned.  Remove from oven and let cool.  They will dry up nicely like this.  Sprinkle a couple croutons on the soup and enjoy.
