Courgette Cake - Learn from My Mistakes

Now this really is a fabulous cake. I know it sounds kinda odd to have a courgette in a cake, but trust me on this. Just think of it as carrot cakes second cousin and you'll be fine. It's also delicious (despite what you may think about the image below). It was my first attempt at baking for awhile. The occasion was my Mother's birthday and I wanted to surprise her with something wholesome and unusual. I got the recipe from Nigella's How to be a Domestic Goddess. I have to admit in the middle of the mess and flour all over the kitchen I didn't much feel like a goddess. But I managed to do it and make it I did! Wooop!

The only thing I would say is that perhaps I could have gone easy on the old filling and topping and not used the exact quantity Nigella had recommended. As you can see from the over flowing mess everywhere. So add each layer with caution!
For the Cake   For the Filling
60g Raisins   200g Cream Cheese
250g Courgettes  100g Icing Sugar, sieved
2 Large Eggs   Juice of one lime
125 ml of Vegetable Oil   2-3 tablespoons chopped pistachio
150g Caster Sugar  For the Lime Curd
225g Self Raising Flour  75g Unsalted Butter
1/2 Teaspoon Bicarbonate of Soda  3 Large eggs
1/2 Teaspoon of Baking Powder   75g Caster Sugar
2 x 21cm sandwich tins, greased and lined   4 limes and the zest of one
