Country-style Greek Potato Stew
This country-style Greek potato stew, known as Patates Yahni, is a comforting and hearty dish perfect for chilly evenings. It's packed with tender potatoes, flavorful vegetables, and aromatic herbs, simmered in a rich tomato broth.

Ingredients:

  • 4 large potatoes, peeled and cubed

  • 2 onions, finely chopped

  • 2 carrots, diced

  • 3 garlic cloves, minced

  • 1/4 cup olive oil

  • 1 can 14 oz diced tomatoes

  • 2 cups vegetable broth

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions:

In a large pot, heat olive oil over medium heat


Add onions and garlic, saut until translucent


Add carrots and cook for another 3-4 minutes


Stir in potatoes, diced tomatoes, vegetable broth, oregano, and thyme


Season with salt and pepper


Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until potatoes are tender


Serve hot, garnished with fresh parsley
