Corned Beef Hash with Bacon is an easy and delicious dish using leftovers, including corned beef and potatoes, that are seasoned and warmed and topped with a fried egg.

I've never made Corned Beef that I intended it to be put on a plate and cut up with a knife and fork. I'm not sure why but when St. Patrick's Day is on it's way, I see those plates of corned beef and a spoonful of cabbage and that looks like food they would have served the Little Rascals in the Orphanage (it's OLD but my generation loved them!). But I do make it and one reason is this Corned Beef Hash with Bacon.

The word hash itself comes from the French verb hacher, to chop. Indeed, the Old French word for "axe," hache, is where we get our word hatchet. Makes perfect sense...take some of those slices, add some potatoes and chop everything into smaller pieces. Add together with some bacon and aromatics and what can I say? YUM!!

Corned Beef Hash with Bacon is a bit like this Turkey, Cranberry, and Cream Cheese Sandwich I have to have the day after Thanksgiving...I love it as much as the turkey I make the day before. Maybe more!

My primary effort for the St. Patrick's Day holiday is to make Homemade Reuben Sandwiches. I figure they work..you've got corned beef and cabbage (in the form of sauerkraut). Guess it's my German heritage that favors kraut to sautéed cabbage! I also love a dish called Irish Colcannon so yes, I have a sandwich with mashed potatoes!

But I don't make corned beef without a second intent, and it's to have enough to make a couple of dishes of Corned Beef Hash with Bacon; my second favorite corned beef dish.

One thing I love about this meal is that it's not really cooking everything from scratch so it's easy; don't we all need easy sometimes? It's simply the combining of delicious leftovers to make something new...and in our case, adding some aromatics along with bacon and egg to a make it a bit different.

Corned Beef Hash recipes do not necessarily include either bacon or the fried egg, but it's our family tradition. If my dad did it, I do it too! It does make for a very hearty breakfast or even dinner. And don't limit it to St. Patrick's Day leftovers; it's reason enough by itself to make a slab of corned beef just so that you can prepare Corned Beef Hash with Bacon and enjoy a Guinness...any time of the year! Slainté!
