Corn Pancake

By Rumblingtummy @RumblingTummi
Having some neighbours over for tea.  Did not want to spend too much time in the kitchen, and thus using the air fryer, I made Corn Pancake.
A relatively simple recipe to put together.  Just take note not to be careful when getting the kernels out from the cob.
I did not get the texture of a crispy outer but the fresh sweet corn is nice.

Findings: The neighbours like it as it is something different and highly recommend to use fresh corn for this recipe.
What you need:
1 ear corn (est 170g corn kernels)1 egg20g corn starch15g sugar18g oil20g glutinous rice flour1 tbsp water
Method:
Remove the husk and silk.  Wash and let it steam for 10 mins until cooked.
Remove corn kernels into a bowl.
Add egg, cornstarch, sugar, oil and glutinous rice flour.
Mix well.  If dry, add a little water. (I added)
Pour into an air fryer liner.   Spread evenly.
Air fry at 160℃ for 15 mins.
Sprinkle sugar and black sesame.
Brush a layer of oil and continue to bake for another 4 mins.
Remove and cut into wedges.
Enjoy!
