CoBo Sushi Bistro and Bar in the Heart of Boone, North Carolina

In the heart of downtown Boone in North Carolina is a culinary hidden gem called CoBo Sushi. Opened in May of 2013, CoBo was started by Joseph Miller who is also the head chef. Joseph lived in Steamboat Springs, CO for 5  years learning and apprenticing under multiple accomplished sushi chefs.  Upon returning to his home town, he brought his passion here to fill a void the downtown area of Boone has had for a long time. In homage to his Colorado training, he named the restaurant CoBo (Colorado/Boone).

CoBo has a nice relaxed atmosphere. The combination of romantic lighting and plush furniture surrounded by warm colors gives the restaurant a relaxed yet upscale feel.

The main reason locals and tourists alike flock to this new establishment is the food. The classic theme of sushi is taken to a whole new level at CoBo. The food is amazingly palatable not only to your taste buds, but also to your eyes. Everything here is served with just the proper amount of flair.

With entrees like ginger beer battered fish and chips and sushi rolls with fun artistic spins, who wouldn’t want to chow down here.

This was Hamachi Tataki, a yellowtail sashimi that the chef took a blow torch to and then topped with thinly sliced jalapeno, crispy shallots, diced apples and finished it off with a truffle ponzu sauce. It was absolutely exquisite.

You know that a meal was great when the plates look like this at the end. Notice my plate looks almost clean. That is because the food barely made a visit there before hitting my mouth.

If you are ever in the Boone area, CoBo sushi should definitely make your list of places to have a meal. The great food and warm inviting atmosphere is sure to make for a great night out.
