Classic Toad in the Hole

As the kids are back to school they need a hearty meal after a hard day of maths and English.

One of my favourites when I was younger was toad in the hole, and it’s such a quick and easy meal to make. Great if you’re on a budget as well.

Serves 4

Ingredients needed:  

125g Plain flour,

2 large eggs,

150ml of semi skimmed milk,

1 pack of 8 sausages,

A pinch of salt and pepper,

Fry Light,

Estimated Costing:

A pack of six eggs £1.00

Fry Light £2.00

Semi skimmed milk 89p

8 Sausages £1.50

Plain flour 55p

Total cost per person: £1.49

What to do:

1. To make the batter sieve the plain flour into a bowl. Make a well in the middle and add the beaten egg and the milk. Mix thoroughly into a smooth batter.

2. Meanwhile spray the roasting tin with the fry light and add the sausages. Bake in the oven for 10 minutes.

3. After 10 minutes take out the sausages and add the batter. Make sure it covers the whole tray and bake in the oven for a further 20 minutes, or until the sausages are cooked and the pudding is fluffy and risen.

4. Serve with gravy and seasonal veg, then enjoy!
