Thanks to everyone who attended my Christmas Eve Dinner event at Bucks County Community College in Newtown, Pa… this past weekend..we had a blast and of course filled up with a festive 5 course meal.. that included
*Tortellini au gratinwith beschamel sauce and cod
*Risotto with peas and St Peter’s Fish
*Thick spaghetti topped with a salmon tomato seafood sauce
*Cold tuna salad appetizer
*Italian style creampuffs topped with dark chocolate and whipped cream

Print Risotto with Peas and SeafoodIngredients
- 1 cup Arborio rice
- 1 slice of onion finely chopped
- 8 ounces of fresh or frozen peas
- 1 quart of vegetable or chicken broth
- 1 tablespoon of butter
- 1 lb of St. Peter's Fish (cleaned) cooked and flaked into small pieces)
- 1 glass of dry white or sparkling dry white wine
- 2 tablespoons extra virgin olive oil
- Handful freshly chopped parsley
Instructions
- Place broth in saucepan and bring to a boil, then place over low heat. Bake St. Peter's Fish and flake and set aside. In another large saute pan place olive oil and chopped leeks or onion, saute till golden, add in rice. Toss till rice is toasted, add in wine (of your choice). Once liquid has evaporated add in 3/4 cup of broth, stir and repeat till rice is tender. 5 minutes before cooking is done or after rice has been cooking for 10 minutes add in cooked seafood and peas. Continue to add in broth 3/4 cup at a time, stirring till liquid evaporates. risotto should be done after a total cooing time of 18 minutes, serve with a sprinkle of freshly chopped parsley
