Ingredients:
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions:
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Divide the dough in half and shape each half into a disc
Wrap them in plastic wrap and refrigerate for at least 1-2 hours
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
Roll out the chilled dough on a lightly floured surface to about 1/4 inch thickness
Use cookie cutters to cut out desired shapes and place them on the prepared baking sheet
Bake in the preheated oven for 8-10 minutes, or until the edges are set
Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely
Once the cookies are completely cool, you can decorate them with icing or sprinkles if desired
