A quick and easy Chili-Lime Chicken and Sweet Potato Skillet, packed with fresh flavors and only one pan to wash up!
It’s really starting to feel like summer out there! The garden is semi-planted, the BBQ has been on non-stop, LOTS of ice cream has been consumed. The flip flops have been flip flopping, the sprinklers have been sprinkling, the cold beers have been kh-chh’ed (that was the sound of a beer bottle opening, FYI).
And for some reason, summer makes me kind of lazy…you know? That house cleaning? It can wait….the laundry? It can wait, too. I have more important things to think about. Like lounging on my deck. With one eye semi-open and on Kai. Because that kid is SO much trouble, so lounging is never all that restful in reality.
Well, product of that laid-back easy summer attitude I’ve had lately is this super easy and delicious chili-lime chicken and sweet potato skillet…so easy, super tasty, and only one pan to wash up. Woo hoo!
