It sounds strange, but I cook all sorts of food at our house EXCEPT Filipino food. I don’t really know why — it could be that I simply forget it exists. I have no reminders. Other than Filipino tourists passing through who are connected to me in some way (and this is quite a rarity), I haven’t met any Filipinos in Portugal. I was informed that there’s a Filipino restaurant in Lisbon (just one!) but I have yet to eat there. If I want to eat Filipino food I’d have to cook it myself, and here we are, back at square one.

Last Christmas in Vancouver, we had Filipino food at a relative’s house because I was really craving it and put in a request. It’s funny how a long time can pass before I think about Filipino food, but as soon as I start thinking about it, I start dreaming of when I can eat it again.

We have Filipino-American couchsurfers staying with us this weekend, and they generously offered to cook chicken adobo for us. This is my favorite of the meat dishes, and they made two versions of it! (You can tell I’m distracted by the smell of the food, because my photos are not colour-balanced and barely in focus.) The smell is divine — a marinade of vinegar, garlic, and soy sauce — and a whiff of it makes my mouth water. If you’ve never had this dish, it’s a must!
