Cereal Wheat Bread and Degustabox

As soon as I saw the box of Nutribix Cereal in the February Degustabox, I knew exactly what I wanted to make as my recipe for the month.  I have been making a bread for about 40 years now that uses wheat cereal biscuits and I thought this cereal would be perfect for that.  You can make it in either small loaves, or in buns.  I did buns, but both would be beautiful.  It's a hearty bread and very tasty!  More about that later, first I'd like to tell you about the other products I received in this box.

 Sarson’s, the UK’s number one vinegar brand, is set to launch a new limited edition Malt Vinegar bottle featuring its well loved ‘Fish and Chip’ characters created by artist Paul Thurlby.
This has always been our choice "Go With" when we are eating chips.  It's a must.

We got the Cranberry, Orange and Oat Slices and they were very exceedingly good!   I also like that Mr Kipling uses the traffic light system of nutrition on it's packaging.

I loved the healthy aspect of these delicious bars. As a diabetic, it is important that I keep my snacks high on fiber and low on  carbs and processed sugars.

This of course was the product I chose to highlight with a recipe this  month.  Normally I use another wheat brand cereal in this bread recipe, but I am happy to say that the Nutribix worked perfectly in this!

These rolls are lovely with a beautiful texture and flavor.  They won't rise as much as regular white bread rolls would, but they are a deliciously healthy alternative!

You can also bake it as a whole loaf, in which case it makes 2 small loves of a deliciously hearty bread!  These rolls went down a real treat with a hot bowl of soup!  They were also pretty tasty on their own.  Is it just me, or does everyone have to enjoy a hot roll fresh out of the oven spread with cold butter for a really delicious taste treat???

*Cereal Wheat Bread*Makes two loavesPrintable Recipe 
A recipe I adapted to use some delicious wheat biscuit cereal I received.  You can use any pressed wheat cereal in this. 
250ml milk (1 cup)2 ounces butter (1/4 cup)2 dessert spoons of soft light brown sugar(about 1/4 cup loosely packed)1 tsp salt5 pressed wheat cereal biscuits crumbled2 tsp quick yeast1 large free range egg280g of bread flour (2 cups)

Warm the milk with the butter just until the butter melts.  Crumble the cereal into a bowl, add the brown sugar and salt.  Pour the milk mixture over top and let stand until lukewarm.   Stir in the yeast and beat in the egg.   Stir in the flour until it is thoroughly incorporated.  Knead until smooth, about 10 minutes.   Place into a lightly oiled boil, cover with a clean towel and set aside to rise until it has doubled in size.

Punch down.  Knead for about 1 minute on a floured board and divide in half.  Shape each half into a  small loaf and place into two buttered loaf tins.  Cover and allow to ise in a warm draft free place for another hour until doubled in size.

Preheat the oven to 180*C/350*F/ gas mark 4.  Bake the read for 30 minutes until the loaves are golden brown and sound hollow on the bottom when tapped.  Cool on wire racks.  Slice to serve.
Note- Dough may also be shaped into approximately 16 rolls.  Bake and rise times will be approximately the same, although I would check them at 20 to 25 minutes just to be sure.

I really do have to apologize to the people at Degustabox for my tardiness in posting about the February Box.  I had some severe health issues to deal with this month, which interrupted my plan of action!
