Buffalo Turkey Meatball Sub

Finding healthy alternatives to our favorite meals or appetizers isn't always easy. Often it seems that I don't mind healthier choices but when your husband and kids just don't want to give up a favorite, and not so healthy food, then it becomes harder to stick with those healthy choices. Modifying one of those favorite foods to a healthier recipe leaves a lot of cooks skeptical. It can be challenging to convince family to try a new version of their favorite things.

Buffalo Turkey Meatball Sub

This Buffalo Turkey Meatball sub will change that way of thinking. It's packed with flavor and will satisfy that "need" for hot wings. I say need because I cannot count the number of times that my husband has tried to convince me he "NEEDS" wings! Because it is made with lean turkey breast and is baked rather than fried, it is much healthier than bone in hotwings or a traditional beef meatball.

Buffalo Turkey Meatball Sub

Ingredients

  • ¼ cup minced red onion
  • ¼ cup finely chopped celery
  • 2 TBS olive oil
  • 1 pound lean ground turkey breast
  • 1 egg
  • ¼ cup Panko style bread crumbs
  • bottle of your favorite hot sauce or BBQ sauce
  • salt and pepper to taste
  • 8 sub buns
  • ½ cup blue cheese
  • blue cheese dressing

Instructions

  1. Preheat oven to 350 degrees
  2. Heat olive oil over medium heat and begin to sauté the onions and celery. Cook until softened.
  3. In a large bowl, combine the ground turkey with the sautéed vegetables. Add the egg to the meat and vegetables and mix together. Add bread crumbs, salt, and pepper and mix until completely blended.
  4. Roll meat into 1 ½"-2" diameter balls. Place on a cooling rack on top of a baking sheet. This keeps the meatballs from sitting in any fats or juices that cook out of the meat. It produces a less greasy and more firm meatball.
  5. Bake in preheated oven for 10 minutes on each side.
  6. Remove meatballs from oven and transfer to bowl to coat with sauce of your choice.
  7. Broil sub buns on low for 2-3 minutes.
  8. Add meatballs to bun and top with crumbled blue cheese.
