The fifth bottle was reviewed on 09/05/2014.

Appearance: Lightly hazy gold with amber notes, off white head, no head retention.

Aroma: Floral, white pepper, honeysuckle, herbal notes, anise, basil, sage, honey.

Taste: Herbal, anise, light funk notes, with a light white pepper finish.

Overall Impression: After 2 years, the beer is really settling in!  The last of the diacetyl has been taken up by the yeast and things are getting very integrated and complex.  So far, I think the beer is at it’s best since it was new.  The beer is smooth, complex, and interesting.  While there isn’t any head retention, there’s still a good level of spritz.  The mouthfeel is balanced with a light oily feel and a light tartness.  If you have a bottle, I’d give a high recommendation for opening it now.  There’s still plenty of time left on this beer, but it’s in a fantastic phase right now.

Availability: Probably gone from stores.  I’ve seen it up in some “vintage” sales.
