I don’t know about you, but having a 2.5 year old sure sucks the life out of me! I feel like I can never get enough energy to keep up with her! I mean, I guess if I slept 12-14 hours in a 24 hour period…. I would feel a tad bit rested.
We all know getting that much sleep is virtually impossible…. and since I have been trying to limit my caffeine consumption….
In comes the Vitamix…. and lots of veggies!
Why this combo of ingredients?
Well… Ginger boosts immunity, and since Kale has more Iron than beef {per calorie}… it’s a great energy booster. And Carrots… they fight Cardiovascular disease, among other things… and Apples are a great source of fiber and adds a natural sweetener!

Get Vitamixin’.
{Makes 2 Servings}
What you need:
2/3 C. Chopped or Shredded Carrots
2 C. Kale
1 T. Ground or Chopped Ginger
1 Apple {include seeds and peels if using Vitamix}
1 C. Water
10 Ice Cubes
Place everything into Vitamix, blend until completely smooth. Drink immediately or else pulp separates.
