
These Black Bean and Roasted Red Pepper Veggie Burgers taste great and are better for you than regular beef burgers. They are great for a meatless meal because they are full of flavor and have a hint of smoke from the roasted red peppers.
Ingredients:
- 1 can 15 oz black beans, drained and rinsed
- 1/2 cup roasted red peppers, chopped
- 1/4 cup breadcrumbs
- 1/4 cup rolled oats
- 1/4 cup grated carrot
- 1/4 cup diced onion
- 1 clove garlic, minced
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/4 cup shredded cheddar cheese optional
- 4 burger buns
- Lettuce, tomato, and your favorite toppings for serving
Instructions:
Black beans, roasted red peppers, breadcrumbs, rolled oats, grated carrot, diced onion, minced garlic, cumin, paprika, salt, and pepper should all be put into a food processor
Pulse until everything is well mixed but not smooth
If you're using cheese, add the shredded cheddar cheese and mix it in
Take the mixture and shape it into 4 burger patties
Add a little oil to a grill or skillet and set it over medium-high heat
The veggie burgers should be cooked for four to five minutes on each side, or until they are hot all the way through and have grill marks
You can grill or toast the burger buns until they are just barely browned
Add lettuce, tomato, and any other toppings you like to your veggie burgers
