Betsi’s Coleslaw from Scratch

Betsi’s Coleslaw from scratchCut a whole cabbage (removing the stump) into thin or chopped pieces.

Add a finely chopped medium onion.

Add shredded carrots. I just use my peeler and peel two medium carrots in short strips.

In a jar or bowl mix 1/2 cup mayonnaise, a tablespoon of lemon juice, 2-3 tablespoons of liquid honey (not solidified), 1/4 cup of olive oil, 1/4 cup apple cider vinegar. 1 teaspoon of salt, 1/2 teaspoon black pepper, 2-3 tablespoons of fresh chopped dill if you have it. Dry dill spice is ok but not ideal. Use at least 2 teaspoons of dry dill if no fresh.

Mix it all together and pour over your chopped cabbage, onions, and carrots for amazing coleslaw. Let it sit to incorporate before serving if you can wait.
