Ingredients:
- 1 pre-made tart crust
- 2 medium-sized beetroots, peeled and thinly sliced
- 100g blue cheese, crumbled
- 50g walnuts, chopped
- 2 eggs
- 200ml heavy cream
- Salt and pepper to taste
- Fresh thyme leaves for garnish
Instructions:
Preheat the oven to 180C 350F
Place the pre-made tart crust into a tart pan and gently press it down to fit the pan
Trim any excess dough
Arrange the thinly sliced beetroot evenly over the tart crust
Sprinkle the crumbled blue cheese and chopped walnuts over the beetroot slices
In a mixing bowl, whisk together the eggs and heavy cream
Season with salt and pepper
Pour the egg and cream mixture over the beetroot, cheese, and walnut in the tart pan
Bake the tart in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown
Remove the tart from the oven and let it cool slightly before slicing
Garnish with fresh thyme leaves before serving
