BBQ Veggie Fajita Wraps

I love sunny days in the garden, I mean who doesn't! Last weekend was so lovely I couldn't bare to go inside even for a second to prepare dinner. So I grabbed my chopping board, knife and plate and prepped the whole dinner sat on the patio.

It felt so natural sitting outside surrounded by vegetables whilst getting a fire on the BBQ going. I hope for many more days like this! I had also made a daisy chain to wear as a necklace so I was having a real earth girl hippie moment :)

I had originally planned to make fajitas for dinner, usually by stir frying or roasting the vegetables, but then I thought why not use common fajita vegetables and cook them on skewers. Courgette's, peppers, onions and mushrooms are all perfect for skewers because they are firm enough to hold their shape on a grill/bbq.

I used my favourite fajita spices to season the skewers (the wind also seasoned my patio haha). Smoked Paprika, Cayenne Pepper, Dried Oregano, Garlic Powder, Salt and Pepper work perfectly on the vegetables.

There is no correct way to cut your vegetables and load up the skewers, just chop it all up fairly chunky and pile it on in any order. The only thing I would say is don't make it too cramped on there, let the heat get up in between all the veg.

My BBQ coal wasn't amazing so it took while to heat the skewers but once it got going it was a really satisfying way to cook. I cooked my skewers in batches, turning regularly to cook evenly.

BBQ Veggie Fajita Wraps

I don't think there needs to be a particularly strict recipe for this, it's more of a lazy sunny day kinda meal. Use whatever you have to hand for your veg, mix up your favourite spices and add your usual toppings!!

Serves 4

2 Large Courgettes
1 Large Red Onion
4-5 Peppers
1 Punnet Closed Cup Mushrooms

Smoked Paprika
Cayenne Pepper
Garlic Powder
Dried Oregano
Salt and Pepper

Olive Oil

8 Tortilla Wraps
Tomato Salsa
Sour Cream
Kidney Beans in Chilli Sauce
Fresh Coriander

Chop your veg, thread it onto the skewers and coat generously with each spice/ seasoning. Cook either under the grill, on a griddle pan or on the BBQ until cooked. Heat the chilli beans.

Heat the tortilla wraps and push the veg off the skewer on to the wrap. Pile up with your toppings, wrap the tortilla up tight and tuck in!

So messy to eat but such a great way to share food with your friends, plus it's so fresh and delicious.
