Banana Oats Pancakes are deliciously fluffy and prove to be a very nutritious breakfast when served with milk. The batter of the pancake is made with the ready to use Banana oats pancake mix from My Little Moppet Foods which has the goodness of organic oats, wheat and raw Kerala banana powder.   • 1/4 cup Banana Oats pancake mix
  • 1 whole egg or 1/4 cup milk
  • 1-2 teaspoons jaggery powder (optional)
  • 1-2 tablespoons ghee to cook the pancakes

Method:

1. (For the eggless batter) Add 1/4 cup of the pancake mix with 1/4 cup milk in a bowl. Whisk well. Add little more milk if you feel the batter is lumpy. But do not add more milk, or you won’t get fluffy pancakes.

2. (For the batter with eggs) Add 1/4 cup of the pancake mix with 1 whole egg in a bowl. Beat well. Add little milk if you feel the batter is lumpy. The batter should not be very thin or thick. I added just 1 tablespoon of milk and 1 whole egg to the pancake mix to get the right consistency.

3. Add Jaggery powder to the pancake batter and blend well. (this step is purely optional)

4. Heat a greased pan and add a ladle full of batter in the center of the pan. Do not spread it.

5. Drizzle ghee and cover cook the pancake on low to medium flame from one side. Flip it and cook on the other side as well.

6. Prepare all the pancakes in the similar manner.

7. Drizzle the pancakes with some honey or dates syrup and serve with ripe banana slices and some chopped walnuts.
