Banana Brownies

Today we are celebrating one of all kid's favorite occasion, birthday. Cakes and brownies are great as desserts for kids parties. These brownies are a little different with the addition of mashed bananas. I found this recipe at Fuss Free Cooking and it looked so yummy that I had to try it right away.
Banana Brownies I like my brownies cakey than fudgy. These banana brownies have a cakey texture and they are not overly sweet. I used half wholewheat pastry flour and half all purpose flour to sneak in some fiber into the dessert. 
Banana Brownies My son absolutely loved these brownies. These are perfect as give away gifts for a birthday party or serve them with sprinkles or vanilla ice cream on top.
Banana Brownies
Ingredients: Light Brown Sugar - ½cup
All purpose flour - 1cup (I used ½cup of whole wheat flour and ½cup of AP flour)
Butter - 6tbsp
Dark Chocolate - 3.5oz., grated
Egg - 1 (you can easily use a flax egg or egg-replacer)
Bananas - 2 medium, mashed
Salt - 1/8tsp
Baking Powder - 1tsp
Vanilla extract - 1tsp
Banana Brownies
Method:
  • Preheat the oven to 325°F. Line a 8" square baking pan with parchment paper. Grease the uncovered area with cooking spray.
  • Heat butter and chocolate in a small saucepan, stir until everything is melted. Set aside to cool.
  • In a medium bowl, combine the mashed bananas, vanilla extract, brown sugar and salt. Then add in the melted butter-chocolate mixture and mix well.
  • Stir in the flour and baking powder and mix just until combined.
  • Pour batter into the prepared pan and bake for 30-35 minutes or until a cake tester inserted into the middle comes out clean.Cool the brownies in the pan before cutting them.
