Banana Bread Muffins Using Silicon Baking Cups

Last week, I noticed that the bananas on the counter were going bad and I really didn’t want them to go to waste. Nobody wanted to eat any plan bananas at the time so I decided to make some banana bread muffins for the kids. I was glad that I made the muffins because they were a huge hit.  I love it because it is a simple recipe and it gives them something healthy to eat for breakfast or to snack on. Ingredients Needed:

2-4 very ripe bananas

1/3 cup of melted butter

1 cup of sugar

1 egg beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

pinch of salt (optional)

1 ½ cups of all-purpose flour


  1. Peel and place ripe bananas into a mixing bowl.
  2. Mash the bananas with a fork until they are smooth.
  3. Stir the melted butter into the banana mixture.
  4. Mix in baking soda and salt (optional).
  5. Then stir in sugar, egg, and vanilla.
  6. Then add the flour and stir until the flour is mixed into the mixture.
  7. Spoon 2-3 heaping spoonfuls into the baking cups.
  8. Preheat the oven to 350 degrees.
  9. Cook the muffins for 18 to 20 minutes or until they are golden brown. I always test to make sure that they are done by poking a toothpick into the middle of the muffin. If it comes back clean, then they are done. If not, you need to bake them for a few more minutes.
